I was so hungry when I got home from work, I quick whipped up some penne with shrimp, feta, grape tomatoes and spinach. I used the grape tomatoes to make the sauce – just set them on low heat in the frying pan and added some EVOO and tons of garlic. In a separate pan I sauteed the shrimp again with a lot of garlic, once the pasta was done, I drained it and added the tomatoes and shrimp, removed it all from heat and added 2 big handfuls of spinach and topped it with some feta. This meal was ready in under 20 minutes and devoured in far less than that.

I am sad that I didn’t snap an after photos – it looked so colorful. Note to self – exercise some self control next time and take pretty dinner pictures.
